乳蛋白質率對乳脂肪率比值之生理意義

不同品種乳牛的乳組成不同,因此其乳蛋白質率對乳脂肪率的比值(
P/F)也會有所差異(表 1;Waldner et al., 2007),以荷蘭牛為例,P/F 變動範圍為0.80-0.83,若轉換成乳脂肪率對乳蛋白質率的比值(F/P),變動範圍則為1.20-1.25。因許多文獻所採用的比值方式不同,但只要留意是 P/F 或者 F/P,前者通常數據不超過 1.0,而後者通常數據不低於 1.0。Pavel and Gavan(2011) 調查荷蘭牛總乳在不同季節與早晚擠乳之間的 F/P 及 P/F 變動,於熱季(7-9月)與4-6月比較,其乳脂肪率與乳蛋白質率平均都下降,然而 F/P 或 P/F 都無明顯變動;晚上擠乳的乳脂肪率與 F/P,均有高於早晨擠乳的現象(表 2)。荷蘭牛乳量與乳脂肪率、乳蛋白質率的遺傳相關分別為-0.362與-0.520,而乳脂肪率與乳蛋白質率則是 0.470(Miglior et al., 2007)。經由過去到現在長期選拔過程,我們可以預期未來各品種乳牛的 F/P 及 P/F 的比值將會持續有所變動。表

調整飼糧脂肪的方式,可以是提高脂肪含量或者增加過瘤胃脂肪比例。

六、結 語
綜觀各文獻資料,正常荷蘭牛的
F/P 範圍應該可以界定在 1.00-1.25 之間,若以 P/F 方式表達,正常的範圍是 0.8-0.9。如果 P/F 低於 0.67,需注意檢查牛群是否有酮症的問題;如果 P/F 大於 1.0,可以從「非結構碳水化合物」含量不宜超過總飼糧乾物質的 45 %,以及芻料長度不要短於 1 公分等方向來修正。同時還可以搭配監測「乳尿素氮」含量,檢討是否飼糧之蛋白質含量不足或採食量不足而導致乳尿素氮含量低於 10 mg/dL?或者是否飼糧中非結構碳水化合物含量不足或過瘤胃蛋白質含量偏低而導致乳尿素氮含量高於 14 mg/dL?有了多重的牛乳檢驗項目共同把關與相互應證,應該可以讓我們更能夠掌握泌乳牛群的健康與營養狀態。七、參考文獻
